The corn this year has been so good.....so consistently sweet and delicious !
I wanted to celebrate all that goodness in one dish with some of my favorite flavours. Thai Green Curry, coconut milk, Lemongrass, Roasted Jalapeno's, fish sauce, cilantro, lime and topped off with extra bbqed corn.
Pretty happy with this one, bold, spicy and full of flavour...

Ingredients
- 4 x chicken thighs
- 3 x medium sized potatoes, cubed
- 1 x carrot, thinly sliced
- 4 x ears of corn
- 1 x small sprig of cilantro
- 1 x tbs fish sauce
- 1 x 400ml can of coconut milk
- 2 x cups of chicken stock
- 2 x stalks of green onion
- 4 x cloves of garlic
- 1x roasted jalapeno on the bbq
- 1 x thai red chilli
- 1 x tbs of lemongrass
- 1 x knob of ginger (1 inch)
- 1 x tbs thai green curry paste
- 1 cup jasmine rice
- 1/4 x lime wedge
- salt and pepper to taste
Directions
- put the chicken thighs in a pan in the oven to roast at 375, seasoned with salt and pepper and extra virgin olive oil. Mine were bone in so took about 40 minutes.
- In a large pot, boil 4 ears of corn for 5 minutes, let cool
- In another pot, add your coconut milk, chicken stock and potatoes, bring to a boil and then simmer.
- get your rice on the go in another pot
- With a sharp knife, cut off the kernels of corn from each sides of 3 of the corn cobs. Kep the other one to char on the bbq afterwards.
- Put the loose corn in a blender with, 1 can of water from the coconut milk, ginger, garlic, lemongrass, roasted jalapeno (de-skinned). blend until smoothish.
- add to the simmering pot and mix together.
- once the chicken is cooked and slightly cooled, de-bone and shred into long pieces. add to the soup.
- add green onions, cilantro and salt and pepper to taste.
- lastly char the last piece of corn on the bbq, then cut the sides of each for toppings.
- bowl up your soup, top with bbq corn, green onion, cilantro, red chilli, squeeze of lime
