Today we were doing some projects around the house so it was a perfect opportunity to dust off the slow cooker and get out that pork roast sitting in the freezer.
I decided at having a crack at making my own BBQ sauce which i've wanted to make for a while and i think i may have to add this one to my collection. It was tangy, sweet, smokey, thick and delicious! The perfect saucy accompaniment to the pulled pork.
I had them both bubbling away together for over 5 hours in the slow cooker. It was tough working around the delicious smells of this all day without having a few cheeky nibbles! Well maybe just a few...
For the BBQ Sauce - makes about 2.5 cups
Fry off the onion and garlic for a couple minutes, Stir, then add the spices for another few minutes, Stir, then add everything else.
Bring to a boil, then simmer for an hour until reduced, shiny and thick!
Add the sauce and your medium sized Pork Roast (Butt is best) to your slow cooker on high setting, leave for 5 or so hours and steady your feet as it will make you weak at the knees!
Pull all the meat away with a fork and stir it all up. You can even do this around the 4 hour mark and let it cook all pulled apart for the last little bit.
For the coleslaw - enough for 4 ppl
1/4 of purple cabbage
1/4 of a green or napa cabbage
1 -2 carrots - grated
1/4 cup mayonnaise or natural yoghurt
4 Tbs apple cider vinegar
4 Tbs extra virgin olive oil
salt and pepper to taste
Remember to toast your buns ......and then assemble the goodness!

- 1⁄2 tsp salt

- 1⁄3 cup yellow mustard
